What Food Tracking Apps Can And Cannot Measure

Tracking apps combine label tolerances, database variability and portion estimation, and the resulting figure carries an uncertainty the interface never displays.

A tracking app returns a number to the calorie, and that precision is presentational. Several independent sources of error sit underneath it, and understanding them determines what the number can be used for.

Labels are permitted to be approximate

Nutrition labels are derived from laboratory analysis or from ingredient databases, and regulations allow a tolerance between the stated value and the actual content.

Natural variation contributes as well, since agricultural products differ between batches, growing conditions and seasons in ways no single label can express.

The stated figure is therefore the center of a distribution rather than a measurement of the specific package in hand.

Databases inherit and add error

Apps draw from official reference databases, manufacturer submissions and entries created by other users, and the three differ in reliability.

Searching for a common food often returns many entries with different values, and choosing between them is a judgment the interface presents as a selection.

User-created entries are frequently incomplete or mistyped, and once popular they propagate, since the most-selected entry rises to the top of the results.

Portion estimation is the largest single source

Estimating quantity by eye is unreliable, and the error is systematic rather than random, tending to underestimate larger portions and calorie-dense foods most.

Weighing removes most of that, which is why people who weigh their food report figures far closer to what independent measurement finds.

Cooked and raw weights differ substantially through water loss and absorption, and selecting the wrong form of an entry introduces a large error in a single tap.

What is absorbed differs from what is eaten

Energy values on labels are derived from general conversion factors that do not account for differences in how completely foods are digested.

Whole nuts, intact grains and high-fiber foods are absorbed less completely than their processed equivalents, so identical stated values do not deliver identical energy.

Cooking and processing move in the other direction, generally increasing availability, which is why preparation affects the true figure and not the recorded one.

Using an imprecise tool sensibly

Consistency is what makes tracking useful, because a consistent method produces a stable error, and change over time remains visible even when the absolute figure is wrong.

Comparing one's own recorded intake against someone else's is where the method fails most badly, since the errors are individual and not shared.

Where tracking becomes preoccupying, or where it is being used to justify very low intake, that is a reason to involve a physician or a registered dietitian.
